His childhood spent growing up on an apple farm taught him the foundation of the farm-to-table philosophy. Buying food as locally as possible builds naturally symbiotic relationships between farmers, purveyors and consumers; it also highlights seasonal foods indigenous to the area and delivers the best in flavor, freshness and quality.
Chef Mike and the Lakeview Restaurant’s culinary staff butcher their own meat in house for guaranteed freshness and age the beef for 45-50 days for a flavor that can’t be beat. To further ensure incredible taste and tenderness, they serve Certified Angus Beef® (CAB)—the best of the breed that is first graded USDA Choice or Prime and then meets an additional 10 stringent quality standards. Seafood is also cut down in-house to assure fresher quality. The star ingredient in the restaurant’s top-selling entrée, rainbow mountain trout, comes from nearby Waynesville. Whenever possible, all other featured seafood comes from the coastal waters off North Carolina, South Carolina and Virginia.
